Square Sales Mix Reporting for Restaurants: What Operators Actually Need to See Weekly

What Square gives you, and what it can't

Square's reporting is genuinely good at the demand side: items sold, category totals, discounts, daypart patterns. What it cannot know is your side of the equation — what the salmon cost this week, what the plate margin is after the latest invoice. Sales mix without cost is half a decision.

The weekly sales-mix view that earns its slot

  • Items ranked by margin dollars contributed — not just units sold. A #3 seller at twice the margin beats the #1.
  • Mix shift vs. last week. Are guests migrating toward lower-margin plates? That is a margin leak with no price change anywhere — see spotting leaks before the P&L.
  • Discount weight by item. A dish that only sells discounted is telling you its real price.
